ACCOLADES FOR No35’S STUART MCVEIGH
Recent reviews in the Australian Gourmet Traveller magazine and The Age’s ‘Epicure’ have rated No35 up there with the best praising Restaurant Chef, Stuart McVeigh for his ‘winning dishes’.
Giving No35 an overall score of 15/20, equal to 1 chef’s hat, the Age’s Larissa Dubecki comments that ‘McVeigh’s menu is free of the big, heavy sauces familiar to international travellers of hotel-dining ilk’ and his wagyu girello was ‘among the most restorative high end food you are likely to find’.
Michael Harden, the Australian Gourmet Traveller’s food reviewer described McVeigh’s menu as well informed from his past experiences at restaurants both in London and Melbourne ‘with a blend of complicated, sometimes experimental technique and a more rustic big-flavoured approach where the ingredient is king’.
Both reviewers agreed that No35 had chosen it décor wisely, keeping the background fairly neutral and secondary to the magnificent views which ‘at night with lights dimmed to showcase the city splayed out all around, becomes an event in itself.
Harden headlines his article with the words ‘The views at Melbourne’s Sofitel are legendary and now chef Start McVeigh is delivering food which gives the glittering vista the respect it deserves’.

No35 Restaurant Chef Stuart McVeigh has designed a new contemporary seasonal menu that will take diners to new heights.
Using only top grade suppliers and the season’s best produce McVeigh brings to the table carefully selected A grade boutique oysters from Clyde River NSW, rabbit from the Macleay Valley and 30-day dry aged pasture fed Gippsland Black Angus served with local organic vegetables in season.
McVeigh, a Londoner, who describes his menu as ‘modern European’ says ‘I am fortunate in Australia to have access to some amazing produce and I enjoy the challenge of finding new exciting local foods as the seasons change. These new lunch and dinner menus are perfect for the upcoming summer months’

STUART MCVEIGH ANNOUNCED AS NEW RESTAURANT CHEF
Monday 14 September, 2009:
Highly regarded English born chef, Stuart McVeigh is to head up the kitchen at No35 replacing chef James Viles, who has returned to Sydney.
Having recently resigned from the Botanical, McVeigh will take up the position of Restaurant Chef from 4th October. No stranger to the kitchens at the Sofitel Melbourne On Collins he arrived from England in 2003 for the role of Chef de Cuisine at the hotel where he remained for 2 years.
Since then, McVeigh has cemented his reputation as a leading chef in establishments such as Fenix and the Botanical (recently awarded 1 chef’s hat), so his appointment at No35 has been met with great applause.
Before his arrival in Australia, McVeigh worked with leading London restaurants, the 3-star Nico at 90 Park Lane and the 2-star The Square prior to becoming deputy to one of Australia’s top chefs in London, Shane Osborn, of the Pied a Terre Restaurant, who had a major influence in shaping McVeigh’s food philosophy and style.
The new seasonal menu at No35 will be designed by McVeigh who describes his own style as ‘modern European’. ‘I am fortunate in Australia to have access to some amazing produce and I enjoy the challenge of finding new exciting local foods as the seasons change. I now have a better understanding of the produce that I use and how I should treat it to get the best out of it.’

IAN BURCH JOINS No35 RESTAURANT AS NEW PASTRY CHEF

Ian Burch, formerly of Melbourne establishment The Press Club, is the newest addition to the evolving team at No35
Mr Burch was Pastry Chef at George Calombaris’ restaurant The Press Club, following an impressive career history in the UK and more recently, in Australia after relocating to Melbourne from London in 2006.
Undertaking an apprenticeship at the Houses of Parliament in Westminster, Mr Burch worked at prestigious Spencer House in St. James St London. This was followed by a role at award-winning patisserie Truffles Patisserie in Windsor and time at the historic Sheraton Park Lane in London’s Piccadilly and the exclusive 64-room Bentley Hotel in South Kensington under executive chef Andrew Turner and trained several new apprentices at Jamie Oliver’s Fifteen London. He was involved with The Craft Guild of Chefs promoting healthy eating via demonstrations, and in 2006 was honoured by the guild with the prestigious UK Pastry Chef of the Year Award.
In more recent times, Mr Burch has teamed with another British pastry chef and industry leader Darren Purchese to form a consultancy company, Burch & Purchese creating stunning desserts in the kitchens of leading restaurants in Melbourne and Sydney.

LOCAL ARTISTS OFFER FOOD FOR THOUGHT AT NO 35

Chef Stuart McVeigh may be the number one ‘culinary artist’ at Melbourne’s newest restaurant, No35 at Sofitel, but he happily shares the stage — or the restaurant’s walls at least - with several of the city’s favourite local designers and artists, enlisted to add a touch of ‘art’ to the restaurant’s fine wine and dining palate.
‘Our philosophy regarding the choice of artwork for No35 was to provide an interior artscape that reflected the sophisticated streetscape our guests encounter as they visit us at the Paris end of Collins Street in Melbourne' says Sofitel Melbourne On Collins General Manager and avid arts supporter, Clive Scott.
‘We wanted to present No35 as modern, elegant and engaging, with splendid visual interpretations of its outdoors environs in various mediums, textures and designs.'
‘The urban landscape is full of colour and life, intertwined, just like the branches that frame the street courtesy of Collins Street’s promenade of trees. Leaves lend a living feel to concrete surrounds, while fleeting clouds shift and offer inspiration overhead. All this and more is reflected in the art works we selected for No35.'
